Recipe of the week - Kale and Red Capsicum Frittata

What you will need:

3 large eggs

2 pieces of short cut bacon chopped

1/2 cup of almond or coconut milk

1 tbsp coconut oil

2 cups of kale chopped

1/2 red capsicum chopped

1/3 of an onion chopped

Salt, pepper and chili flakes to taste

How to bring it all together:

  1. Preheat oven to 180 degrees 
  2. In a bowl whisk together your eggs and coconut or almond milk and add some salt, pepper and chili flakes to taste, then set aside
  3. Bring a non-stick pan to a medium heat and add a tablespoon of coconut oil, sauté your onion and capsicum for 3 minutes, then add your chopped kale and cook until the kale wilts, about 5 minutes longer
  4. Add your bacon and eggs to the pan, mix well and let cook for about 4 minutes or  until the bottom and edges of the frittata start to set
  5. Place the pan in the oven and cook for 10-15 minutes until the frittata is cooked all the way through
