Recipe of the Week - Coconut Curry Chicken

What you will need:

1 chicken breast per person

1/2 cauliflower

Handful of snow peas

1 red capsicum

3/4 cup of coconut milk, full fat and unsweetened

1/2 cup of chicken broth

Red onion

1/2 red pepper chopped

1 clove of garlic

1/2 tbs of turmeric

1/2 tbs smoked paprika and 1/2 cayenne (optional)

Salt and pepper to taste

How to bring it all together:

  1. Chop you chicken into small cubes and cook with coconut oil until lightly browned
  2. Place the cauliflower pieces into a food processor and pulse until it has a grainy rice-like consistency or you can grate it. Then season with sea salt and freshly ground black pepper
  3. Heat a new pan to medium heat and sauté the cauliflower with coconut oil
  4. When chicken is nearly done, add all other ingredients into a medium to high heated pot  and cook until boiling
  5. Once boiling turn down the heat and add the chicken, snow peas and capsicum and continue to cook on a low heat for 5 minutes and serve on a bed of cauliflower rice
