Recipe of the Week - Beef Stew

What you will need:

150-200g per person of stewing meat

2 tablespoon of coconut oil or organic grass feed butter

1 onion chopped

1 carrot chopped

3 cloves of garlic chopped

1 can of tomatoes chopped

3/4 cup of raisins

1 cup of red wine

1/4 cup of balsamic vinegar

1 lemon sliced

Salt and pepper

Pesto ingredients:

3 Tbs of extra virgin olive oil

1/2 handful of mint leaves

15-20 green olives

Handful of basil leaves

How to bring it all together:

  1. Preheat oven to 180 degrees, melt the coconut oil or butter in a pot and salt and pepper your meat, place the meat into the pot with the oil and place it in the oven to until you see a visible brown crust on the meat
  2. Remove from oven and place meat onto a plate, add the onions, carrots and garlic to the pot and let them sauté for about 10 minutes until soft
  3. Add the meat back into the pot and also add the raisins, tomatoes, balsamic vinegar and red wine. Stir through and add the slices of lemon on top. Place parchment paper on top of the pot and press it down into the pot. Place the pot into the oven and leave for 2 hours, after 2 hours the meat should be very tender, if not cook for another 20-30 minutes
  4. 10 minutes before the stew is ready combine all the pesto ingredients into a food processor and pulse until mixed
  5. Once the stew if done remove the rind from the lemons but leave in the flesh and then stir in the pesto.
