Coconut fish with Sautéed leek and garlic

What you will need:

150-200g white fish per person

Shredded coconut

1 red onion

1-2 cloves of garlic

2-4 leeks

Coconut oil


Salt and pepper


How to bring it all together:

  1. Pre heat your oven to 175 degrees
  2. Salt and pepper your fish and sprinkle shredded coconut on top
  3. Bake the fish for 20 minutes or until cooked through
  4. Steam the leeks
  5. Fry your garlic and red onion in a teaspoon of coconut oil. Add leeks to the fry once they are steamed with a pinch of salt and a little vinegar
  6. Sauté for 1-2 minutes
  7. Pour over the fish and you are ready to serve
