Coconut Chicken

What you will need

- 1 chicken breast per person
- 1/4 cup of shredded coconut unsweetened
- Pinch of himalayan sea salt
- 1/4 cup of almond flower
- 1 egg
- 2 tablespoons of coconut oil

What you will need to bring it all together

  1. Add your shredded coconut, almond flower and himalayan sea salt in a medium bowl and mix well
  2. Beat the egg in a separate bowl
  3. Heat a non stick pan to a medium heat and add the coconut oil
  4. Dip the chicken breast into the beaten egg and then rolling it in the coconut and almond mixture
  5. Cook your chicken on the fry pan until cooked through. If the crust starts to burn and the chicken is still pink on the inside heat the oven to 180 degrees and bake for 10 minutes
  6. This chicken is perfect with a bed of lightly steamed vegetables or a simple stir fry. Enjoy!
