Chicken meatball Salad

Quick and easy dinner or Sunday lunch

What you will need:

-800g Minced chicken

-Handful of walnuts, crushed

-1 sweet potato, cut into small cubes

-1 beetroot, cut into small cubes

-4 spring onions, diced

-1/2 cup of coriander chopped fine

-1 Tsp Himalayan sea salt

-1/2 cup sesame seeds

-1 Tsp of chili flakes

-1 Avocado

-Handful of mimi tomatoes

-Handful of baby spinach

-Tbs extra virgin olive oil

-Salt & pepper


How to bring it all together:

  1. Pre heat the oven to 180 and line a baking try with baking paper.
  2. Chop up your sweet potato and beetroot into 1cm cubes and set aside.
  3. In a mixing bowl place the minced chicken, diced onions, finely chopped coriander, S&P and sea salt and mix well.
