Recipe of the week - Thai pork meatballs

What you will need

For the meatballs

- 1 600grams turkey mince
- 2 small zucchinis shredded
- 2 small carrots shredded
- 1 teaspoon coconut oil
- 1 tablespoon curry powder
- ½ teaspoon red pepper flakes
- 1 tablespoon freshly grated ginger
- 2 tablespoons minced fresh basil
- 2 garlic cloves minced
- salt and pepper to taste

For the sauce

- 1 75ml can of unsweenten full fat coconut milk
- ¼ cup almond butter
- 1 tablespoon chili garlic sauce
- 1 teaspoon coconut oil
- 1 teaspoon honey
- 2 tablespoons curry powder
-½ teaspoon red pepper flakes
- pinch of salt

How to bring it all together

  1. Heat oven to 350 degrees.
  2. Shred zucchinis and carrots in a food processor using the shredding attachment. Squeeze out water with paper towels.
  3. In a large bowl mix together all the meatball ingredients using your hands to combine.
  4. Firmly shape meatballs with your hands. Set aside on a plate. 10-12 large meatballs.
  5. Place a skillet over medium-high heat and add a teaspoon of coconut oil. Once saucepan is hot, add meatballs to the pan and brown on all sides.
  6. In a medium bowl, whisk together all sauce ingredients until completely combine.
  7. Once browned, remove from heat and pour the sauce on top of the meatballs.
  8. Place saucepan in and bake for 15-20 minutes, or until meatballs are cooked through. 
  9. Garnish meatballs with chopped cilantro and green onions.
