Recipe of the week - Sweet Potato and Lamb Curry

What you will need:

  • 150-200g of diced lamb per person
  • 1 large sweet potato chopped into cubes
  • 1 carrot chopped
  • 1 celery stick chopped 
  • 1 brown onion chopped
  • 1/3 red chili diced
  • 2 cloves of garlic diced
  • 250g coconut milk, unsweetened and full fat
  • 1/2 cup of water
  • 1 tbs of tomato paste
  • Coconut oil
  • Squeeze of lime
  • 2 tsp garam masala powder
  • 1/2 tsp fennel seeds
  • 1/2 tsp of turmeric powder
  • Coriander
  • 1 tsp sea salt


How to bring it all together:

  1. Heat a teaspoon of coconut oil in a large saucepan to high heat
  2. Add in your dice lamb and stir often until lightly browned
  3. Add in the onion, celery and chili, let it cook for 1 minute then turn the heat down to medium
  4. Next add in another teaspoon of coconut oil then the garlic, fennel seeds, turmeric and stir though
  5. Add your water, coconut milk, tomato paste and sea salt, stir through and turn the heat up to bring to a boil
  6. Once boiling turn down to a simmer, cover with a lid and let it cook for 1 hour, stir every 15 minutes
  7. Once an hour has pasted add in the sweet potato and carrots and let cook for another 40 minutes, stir a few time in between
  8. Serve into pre heated bowls and add coriander on top with a squeeze of lemon
