Recipe of the Week - Cauliflower and Caramelised Bacon Salad

This recipe is a great, Paleo alternative to the traditional potato salad.

Make it to take to BBQ’s, picnics and gatherings and still stick to your healthy eating!

The original version of this recipe doesn’t call for caramelising the bacon but since you can use maple syrup to do it instead of sugar, I say why miss out!? Just be sure to use REAL maple syrup and not the imitation; it is very easy to get duped!

INGREDIENTS:

-       ¼ cup organic whole egg mayonnaise

-       ½ cauliflower, steamed in florets

-       3 eggs, boiled and finely chopped

-       ½ red onion, minced

-       2 cloves garlic, minced

-       150g bacon, finely chopped with fat on

-       3 tsp organic maple syrup

-       6 large gherkins, finely chopped

-       1 tsp Dijon mustard

-       Black pepper, to taste

METHOD:

To caramelise the bacon, cook in fat until browned.

Add the maple syrup and cook further until darkened a slightly sticky. Remove from heat.

Mix minced garlic and onion with mayo in small bowl. Add chopped gherkins, Dijon mustard, blacl pepper and mix well.

Crumble the cauliflower into a large bowl. Add chopped eggs and bacon.

Pour in mayonnaise mixture and combine well.

Serve as a side for your favourite cut of steak or just enjoy as is!

TIP: If you don’t enjoy your salad mayo heavy, start with less and keep adding until you reach the desired consistency.
