Recipe of the Week - Balinese Roasted Chicken

What you will need

  • 1 whole chicken (organic preferred)
  • 4 limes
  • 10 garlic cloves, finely chopped
  • 1 knob of ginger, finely chopped
  • 6 red eshallots, finely chopped
  • 6 red chillis, finely chopped
  • Coconut oil
  • 4 kaffir lime leaves
  • 1 pinch of turmeric
  • Alfoil

How to bring it all together

Serves 4

  1. Chop your garlic, ginger, eshallots, chili and turmeric, then add ingredients into a food processor or mortar and pestle to make a paste
  2. Bring a small pan to heat and add in 1 tablespoon of coconut oil, add your paste and fry until fragrant
  3. Place you chicken in the Middle of a large piece of alfoil, large enough to wrap around the chicken
  4. Once your paste has cooled rub it into the skin of the chicken and inside cavity
  5. Cut your limes into 1/4 and place inside the chicken
  6. Season the chicken with salt and pepper
  7. Place the kaffir leaves on top and tightly wrap the chicken in foil and leave for a few hours or overnight to marinade
  8. Cook chicken at 180 degrees for 1 hour and 45 minutes
  9. Let cool for 10 minutes before unwrapping

Perfect with roast vegetables
