Portabella Mushroom Sandwich

What you will need:

- 4 Portabella mushrooms
- 2 boneless, skinless chicken cutlets, cooked (and cut into two pieces)
- 2 slices cooked bacon
- 4 tablespoons guacamole
- 2 tablespoons Coconut Oil
- 2 slices of tomato
- 1/2 cup fresh spinach leaves

How to bring it all together:

1) Lightly scoop out the gills and stem from the mushrooms.
2) Add 2 tablespoons of coconut oil into a pan and cook mushrooms for about 3 minutes on each side or until the mushrooms turn golden brown on the top.
3) Allow mushrooms to cool slightly and build your sandwich using the mushrooms as the bread. Chicken, bacon, tomato, spinach, and guacamole.
