Chicken cashew stir fry
What you will need:
1 chicken breast per person
1 jar of cashew nut butter
Small handful of raw cashews per person
1 can of unsweetened coconut milk
1 tablespoon of coconut oil
How to bring it all together:
Chop up your chicken breast into small cubs and bring a wok to a medium/high heat
Add 1 tablespoon of coconut oil to the wok and once melted add chicken and cook until lightly browned.
While the chicken is cooking chop up your vegetables
Add the onion in for the last few minutes
Turn down the heat to a simmer and add 1 - 2 large tablespoons of cashew nut butter and 1 can of coconut milk and mix through well
Once chopped add the vegetable and cashew into the wok and cook for another 3 to 4 minutes.
